Spicy Vodka Sauce
Ingredients:
- One can San Marzano Tomatoes (Only need the whole tomatoes)
- 4 cloves Garlic, finely minced
- 2 Tbsp Calabrian Chiles
- 2 Tbsp Tomato Paste
- Olive Oil
- 1/4 Cup Vodka
- 1 cup Heavy Cream
- 2 Basil Leaves
- Parsley for garnish (Optional)
Instructions:
- Sauté Garlic over medium heat until fragrant
- Add tomato paste and sauté until raw tomato smell dissipates
- Add Calabrian chiles and sauté for 30 seconds
- Add vodka and simmer until alcohol smell dissipates
- Add only the whole tomatoes from the can and the two basil leaves
- Simmer for 20 minutes until tomatoes lose the raw smell and sauce has thickened. While simmering break up the tomatoes
- Shut off heat and mix in heavy cream. If the sauce is loose, put it over low heat to thicken up.
