Italian Meatballs
This is my recipe for trying to replicate my Grandma's meatballs. I always preferred when they were fried, but I now liked the baked version more.
Ingredients:
- 1lb Ground Beef
- 1lb Ground Pork
- 1lb Ground Veal
- 1 loaf of Italian Bread
- 4 cloves of garlic, finely minced
- Freshly parsley, finely minced
- 6 eggs
- salt and pepper to taste
- Grated parmesan (started with 1/2 cup and add more as you feel fit)
Instructions:
- Chop up the bread into small pieces and soak in water for 15 minutes.
- Combine all ingredients but the bread.
- Before adding the bread squeeze out as much of the water as you can
- Mix all ingredients (but don't work it to much). If the mixture isn't coming together add some breadcrumbs.
- Fry up a small piece to taste for seasoning. Add more salt, pepper, and seasoning (garlic, cheese, etc) as you see fit.
- Form them into balls and fry in 325 degree oil or bake at 400 until the internal temperature reads 165.
Notes for next time:
- Add some dry Italian seasoning as well
- Make sure to break the bread up so it doesn't end up in chunks in the meatballs. Maybe try putting it in a food processor.
