Bolognese Sauce
This recipe takes inspiration from Marcela Hazan's Bolognese Sauce, and the sauce used in Matty Matheson's "Guaranteed to get You Laid" Lasagna. What an unlikely combo...
Ingredients:
- 3 lbs Ground Beef
- 1 Onion
- 2 carrots
- 2 stalks of celery
- 1/4 cup of good Olive Oil
- 1 head of garlic
- 2 cups of white wine
- 1 cup of milk
- 1 can San Marzano Tomatoes
- 1/4 teaspoon of nutmeg
Instructions:
- Chop the onion, celery, and carrots into equal size chunks and put in food processor. Pulse until you get finely diced.
- Mince one head of garlic.
- Put a heavy-bottomed pot over medium-high heat with a little oil. Brown ground beef.
- While ground beef is browning, put a pan over medium heat with olive oil and saute the onion, celery, and carrot mix. You want to cook this until onions have a little color but not caramelizing.
- Once the vegetable mix is cooked add garlic and saute for 30 seconds to a minute.
- Once the beef is browned add the vegetables to the pot and lower heat to medium. Add in a cup of the wine.
- Cook the wine off, add an additional cup and cook off again.
- Once the wine is cooked off, add the milk and cook off. Stirring frequently. You can also add nutmeg here. I prefer to use fresh grated nutmeg.
- Once milk is cooked off, add the can of tomatoes, and 1.5 cups of water and cook at bare simmer for at least 3 hours. If the sauce is getting too dry, add additional water. You know the sauce is done once it has been 3 hours and the fat is separating from the rest of the sauce. If there is too much fat you can skim some off.
- I like to add some butter off heat and stir in. Around 2-3tbsp, but optional.
- Salt to taste
